I have Elise induction and it’s fabulous. I have the Wolf in Sonoma and it’s not worth the money. I also had a Bertazzoni for 15 years in San Francisco with no problems.
A lovely aspirational read as someone who went from a 20” gas stove to a 20” electric stove (not by choice) last year. I did an impressive amount of cooking on the 20” gas including multiple Thanksgiving dinners but sad to say barely any on the electric. It’s literally awful. But hey that is city life sometimes!
Seven years ago on FB Marketplace, I bought a vintage O'Keefe & Merritt, six burners, two ovens, and have never gone back. It did require someone to haul it and repairs, but it has no screens and has required very few subsequent fixes. I was replacing parts on my modern gas stoves - a Costco brand, then a low-end Bosch - constantly. One repairman said, "Oh, you cook? This (the oven ignitor) won't last more than a year. Caveat: I live in Los Angeles, which has an old stove refurb and repair network.
Wolf 36” is great…but the oven knob is imprecise and as a result the set temperature is a guesstimate. Also not sure how accurate it is. Frustrating esp when (I now know, tyvm) I could have gotten that sick blue knobby Lacanch one for less $..
The 36” CornuFe (built for the American market) is a fabulous range. I consider myself a serious cook and I have used these in my last 3 houses. It has no electronics, so there is not a lot to go wrong, unlike many ranges that are essentially expensive computers. I actually couldn’t stand the Wolf….it fans incessantly to keep all of the electronics from overheating. Just my two cents!
Have you looked into ilve? I’ve come across them in listings and they are beautiful! ILVE Nostalgie II Series 36 inch Dual Fuel Range with 6 Burners, Griddle (Glass Door)https://www.wayfair.com/appliances/pdp/ilve-nostalgie-ii-series-36-inch-dual-fuel-range-with-6-burners-griddle-glass-door-ilve1307.html?piid=98168271%2C124968149. I have a Wolf but it’s almost too much and the oven takes forever to heat up.
I have!! Ive heard mixed thing but they’re beautiful
Yes they seem like they could be a little trickier to learn. Not as intuitive to use?
I just don’t know if the build quality is as solid as other brands - for $6,500, I’d rather pay $1,000 more for a BlueStar
I hope you get the range (and kitchen) of your dreams.

I have heard great things about the Elise induction

We have a Wolf range, gas cooktop/electric oven. It’s perfect. Husband uses it constantly and loves it.
I am currently trying to make the same decision! Are you considering induction at all?
We have invested too much into copper cookware to switch to induction, but I know it’s very good!!
